He is Risen! Easter Brunch
Our Easter brunch or "fancy feast" is always my favorite meal of the year. I love setting the table the night before Easter, so it is all ready to go. Last year, I found these paper plates on sale at Hobby Lobby, so clean-up was a breeze!
For the last few years, I've enjoyed making the same line-up of breakfast dishes for brunch. I make gluten-free lemon poppy seed muffins, egg casserole, and cheesy potatoes, and serve them with orange juice, coffee, and fresh fruit.
I prep all three dishes the night before Easter. I make the muffins, pour them into the muffin pan, make the frosting ahead of time, and stick both (separately) in the fridge. The egg casserole and cheesy potatoes can also be made ahead, stored in the fridge, and then baked in the morning! We like to have our dyed hard-boiled eggs with the lemon poppyseed muffins first thing in the morning, before we go to Mass, and we enjoy the other parts of the meal as our brunch after Mass!
